Believe it or not we like beer and the idea of making Guinness beer cupcakes was really toying with our brains for quite some time now. So, we decided to give it a go and create adult cupcakes ideal for all our hardcore beer-loving friends who thought cupcakes are simply cute girly desserts! Of course, still on the hardcore note, the recipe calls for chocolate cake batter! The texture of the cake is rich and decadent with the characteristic texture yeast gives to a cake. Dare we say that is a major crowd-pleaser? For the buttercream, we went for the classic vanilla recipe that everyone likes! We decorated the cupcakes with mini pretzels that go perfectly with beer. Their saltiness gave an unexpected dimension to the cupcakes. Sounds intriguing? Read along!

For the chocolate cupcakes you need:

140 g flour

35 g cocoa powder

200 g sugar

125 ml Guinness beer

125 g butter

1 1/4 tsp bicarbonate soda

70 g yogurt

1 large egg

For the frosting you need:

120 g cream cheese

75 g butter

420 g icing sugar


How to make the cupcakes

Start by beating the sugar with the butter until the mixture becomes fluffy and airy. On a separate bowl, whisk the beer, the yogurt, and the egg until they’re combined. Pour the beer mixture into the butter mixture and whisk them together. Slowly add the dry ingredients and mix well. Line a baking tray with cupcake cases and pour the batter inside. Bake the cake at 175C for 20-25 minutes or until a toothpick comes out clean. Let them cool and get on with making the frosting!

How to make the frosting

Beat the butter with the cream cheese and the vanilla extract. Slowly add the sifted icing sugar and beat well. If the mixture is too stiff add some milk, a couple teaspoons will do the trick. Frost your cupcakes (we suggest a round nozzle) and sprinkle some ground pretzels on the side and on top.

They sound pretty cool, right? Well… they were! Everyone who tried them said they were perfectly rich in texture and flavor! Needless to say, everyone went for seconds! We love baking cupcakes and we’re totally adding these to our collection!
