It’s officially picnic season and these little chicken pot pies are the perfect lunch to pack in your baskets and hit the road! Chicken pie is comfort food in our household. They’re packed with flavor and nutritious chicken and they are so easy to make for lunch or dinner. They work so well with chilled white wine or beer or if you’re planning to make them for a picnic, they’re great with lemonade!

One of the reasons we like them is that we can get creative with the dough and give them that farmhouse rustic look and pretend we’re going for a picnic in the Scottish highlands…dreamy, right? So, are you excited yet or should I continue describing imaginary scenarios where these pies would be appropriate for? Don’t get me started on the date ideas, cause that’s how you get the girl or boy! Just imagine a romantic picnic on the park, basket filled with strawberries a bottle of wine, and these chicken pot pies. Tell me that’s not what true love is!

How to make the Chicken Pot Pies

1 whole chicken boiled

6-7 fresh spring onions

250 g greek graviera cheese

2 eggs

1/2 tsp cumin

1/2 cup heavy cream

2 tbsp greek trahanas

salt, pepper

Pastry of your choice (we used Alfa Pastry)

How to assemble the pies

Firstly we boiled our chicken with two onions, bay leaves, salt, and pepper in the speed cooker for about 17 minutes. After that, you need to separate the chicken meat from the bones and skin.  In the saucepan over medium heat, cook onions in butter until soft and translucent. Stir in salt, pepper, and cumin. Slowly add the chicken and cook for 5 minutes. Let your mixture cool and start preparing your dough.

We put our chicken pot pies in a cupcake baking tray but you can make a large chicken pie if you want. Spray your tray with oil to avoid pies sticking. Take your dough out of the fridge and cut small circles to fit the cupcake tray. Put back in the fridge and continue with the cooled filling. Now you need to add the cream, cheese, and eggs and stir well until combined. Fill your cupcake tray with the chicken filling and put some remaining dough on top, be creative! Bake your chicken pot pies for approximately 25 minutes at 175C or until golden and crispy. Enjoy!
